- Stick to what you know. If you specialise in a particular type of cuisine, cook it. You will build up a reputation for this, and you shouldn’t be tempted to spread yourself to thinly and experiment with different dishes.

- Consider offering a takeaway service too. This will help you cater for more customers in your restaurant without having to be able to seat them all – you could offer delivery, or just a takeaway service.
