To start, gather the main ingredients for the dish from your local supermarket, but select the finest quality ingredients you can find; the best places to go for the finest quality ingredients are Sainsbury’s or Waitrose (you can also use Ocado online shop who have the freshest ingredients).
Main Ingredients (serves 4):
6 tablespoons extra virgin olive oil
3 anchovy fillets, from sustainable sources
1 clove of garlic
1 fresh red chilli
2 medium ripe tomatoes
320 g dried spaghetti
Parmesan cheese, to serve
4 tablespoons fine breadcrumbs
6 sprigs of fresh parsley
50 g walnut halves
2 tablespoons pine nuts
To start making the topping, chop the parsley and nuts finely then toast the breadcrumbs in a deep frying pan, then add the ingredients together and mix well before leaving to the side for later.
Start by cooking the pasta in a pan on a low heat for 10 – 15 minutes, then heat the oil in an average sized frying pan over a medium heat and add the anchovies with a pinch of black pepper for seasoning, then prepare the ingredients to make the sauce. Finely chop the chilli, then bash the garlic clove but keep the skin on. Next, increase the heat to low and roughly chop the tomatoes, then add the ingredients just prepared and simmer for 10 – 12 minutes until the sauce is thick.
Once the sauce is done set to the side and check on the spaghetti. When the spaghetti is cooked, drain but reserve 2 – 3 tablespoons of the water, then add the sauce to the mix using the retained water to loosen the mixture if needed.
Serve the pasta and sauce in bowls and generously add the topping mixture and a grating of Parmesan cheese on top; eat and enjoy.
