Although you will know the rules inside out from your training as a caterer, it never hurts to take some time to remember them as you can begin to rush through tasks once you know them well.
You should always be very careful about mixing types of food during preparation. This is now more important than ever, as lots of people have allergies. If you can, find out whether guests have allergies before you begin food preparation. You should still always stick to the best practices, though. Make sure you have a way to transport food that will keep it at an acceptable temperature. If you cannot pre-prepare food and then transport it safely, check the cooking facilities at the venue.
